A mild version of Berbere so that everyone can enjoy the complex flavors of this Ethiopian flavor bomb. We have added some tomato in the mix to tame the spice yet still deliver the vibrant flavor you are looking for.

Ingredients:

Chili powder, paprika, tomato powder, salt, ginger, onion, cardamom, coriander, fenugreek, nutmeg, garlic, cloves, cinnamon, allspice

Suggestions:

Mix together one part Berbere Today, Gone Tomato with one part oil and 3 parts water.

A little goes a long way! use the paste as a condiment along side meat and veggies, or smear it on your chicken wings when they come out of the fryer.

Turns out Dede is right! Berbere really IS good on EVERYTHING!

So if you want to experience this kind of food joy, here's what you need to do:

👩‍💻 order "Berbere Today, Gone Tomato"

Then when you get it in the mail, do a little happy dance

Rub down some flank steak with olive oil, then coat the meat with your Berbere
Cover and let marinate in the fridge for at least 8 hours, or at room temperature for 2 hours

Sear in a cast iron skillet preheated to med high for 3 minutes on each side
Then move the steak to the preheated oven at 400° for 12 minutes (turning once)

Meanwhile deglaze your pan with a little Worcestershire and scrape up the browned bits, then add your sliced onions and mushrooms
Cook those on med to med low for about 15 min while the steak is finishing in the oven and then resting for 5 minutes.

Slice the steak very thin against the grain and toss with the sauteed onions and mushrooms.
I like to put a little Dijon on the bread, but you do you. Use whatever condiments make you happy 😊

Pro tip: you might want to be standing up when you take your first bite, so that you can do another one of those awesome happy dances.

My favorite!

This is my favorite spice by far. I add it to my veggies to add a great additional flavor.
